2 cans young green jackfruit in water or brine, drained and rinsed

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

1 tablespoon maple syrup (optional for sweetness)

12 slider buns

1 cup coleslaw (for topping, optional)

Pickles (for garnish, optional)

Instructions
 

Prepare the Jackfruit: Begin by rinsing and draining the young green jackfruit. Remove the tough core pieces and shred the jackfruit into small chunks using your hands or a fork. Set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and cook for another minute, stirring frequently to prevent burning.

      Add Spices: Stir in the smoked paprika, ground cumin, chili powder, salt, and black pepper. Cook for about 1 minute to toast the spices, enhancing their flavors.

        Cook the Jackfruit: Add the shredded jackfruit to the skillet, mixing well with the sautéed onion and spices. Cook for about 5 minutes, allowing the jackfruit to absorb the flavors.

          Add BBQ Sauce: Pour in the BBQ sauce, apple cider vinegar, and optional maple syrup. Stir until the jackfruit is well coated. Lower the heat and let it simmer for 15-20 minutes, stirring occasionally, until the jackfruit is tender and the flavors meld together.

            Prepare the Sliders: While the jackfruit is simmering, you can toast the slider buns if you prefer a bit of crunch. Simply place them on a baking sheet and toast them in a preheated oven at 350°F (175°C) for about 5 minutes.

              Assemble the Sliders: Once the jackfruit is cooked and flavorful, remove it from heat. Spoon a generous amount of the pulled jackfruit mixture onto the bottom half of each slider bun. Top with coleslaw and pickles if desired.
