Ingredients

2 ripe mangoes, peeled and julienned

2 cups green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

1 cup carrots, grated

1 red bell pepper, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/2 cup fresh lime juice (about 4 limes)

2 tbsp honey or agave syrup

1 tbsp apple cider vinegar

1/2 tsp chili powder (adjust for spice preference)

Salt and black pepper to taste

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the julienned mangoes, green and red cabbage, grated carrots, red bell pepper, chopped cilantro, and sliced green onions. Toss everything together gently until mixed.

Make the Dressing: In a separate small bowl, whisk together the fresh lime juice, honey or agave syrup, apple cider vinegar, chili powder, salt, and black pepper. Adjust the sweetness and acidity according to your taste preferences.

Combine the Slaw and Dressing: Pour the dressing over the mango and vegetable mixture. Toss everything well to ensure that the vegetables are evenly coated with the dressing.

Chill and Flavor: Let the slaw sit for at least 30 minutes in the refrigerator before serving. This will allow the flavors to meld and the vegetables to slightly soften.

Serve: Give the slaw a final toss before serving. Enjoy this refreshing and tangy mango slaw as a side dish or a topping for tacos or grilled meats.
