2 cups green cabbage, finely shredded

1 cup purple cabbage, finely shredded

1 large ripe mango, diced

1 bell pepper (any color), thinly sliced

1 medium carrot, grated

1/4 cup fresh cilantro, chopped

1 avocado, diced (optional)

Juice of 2 limes

2 tablespoons apple cider vinegar

1 tablespoon honey or agave syrup

1 teaspoon Dijon mustard

1/4 teaspoon salt (or to taste)

1/4 teaspoon black pepper (or to taste)

1/4 teaspoon cayenne pepper (optional, for a spicy kick)

Instructions
 

Prepare the Veggies: In a large mixing bowl, combine the shredded green cabbage, purple cabbage, diced mango, sliced bell pepper, and grated carrot. Toss them gently to mix well.

    Make the Dressing: In a separate bowl, whisk together the lime juice, apple cider vinegar, honey (or agave syrup), Dijon mustard, salt, black pepper, and cayenne pepper until well combined.
