Tender Moroccan Lamb Tagine

2 lbs lamb shoulder, cut into 2-inch cubes

2 tbsp olive oil

1 large onion, finely chopped

4 garlic cloves, minced

2 tsp ground cumin

2 tsp ground coriander

1 tsp ground cinnamon

1 tsp ground ginger

1 tsp paprika

½ tsp cayenne pepper (adjust for heat preference)

2 cups vegetable or chicken broth

1 cup canned diced tomatoes (or fresh equivalent)

1 cup dried apricots, halved

1 cup chickpeas, drained and rinsed

1 cup almonds, toasted

1/2 cup raisins or sultanas

Salt and pepper to taste

Fresh cilantro and mint, for garnish

Lemon wedges, for serving

Cooked couscous or flatbread, for serving

Instructions
 

Sear the Lamb: In a large tagine or heavy-bottomed pot, heat olive oil over medium-high heat. Add lamb cubes in batches, searing until browned on all sides. Remove from pot and set aside.

    Sauté Aromatics: In the same pot, add chopped onions and garlic. Sauté until onions are translucent, about 5 minutes. Stir in the cumin, coriander, cinnamon, ginger, paprika, and cayenne pepper, and cook for another 2 minutes until fragrant.

      Build the Sauce: Return the lamb to the pot. Add the broth, diced tomatoes, dried apricots, and chickpeas. Season with salt and pepper. Stir everything to combine and bring to a simmer.

        Slow Cook: Reduce the heat to low, cover the tagine or pot with a lid, and let it cook gently for about 1.5 to 2 hours. Stir occasionally to ensure it doesn’t stick to the bottom. The lamb should become tender and infused with flavors.

          Add Sweetness and Crunch: In the last 15 minutes of cooking, add the toasted almonds and raisins/sultanas. Give it a gentle stir and adjust seasoning if necessary.

            Garnish and Serve: Once done, remove from heat. Serve the tagine hot, garnished with fresh cilantro and mint. Squeeze some lemon juice over the top for a zesty finish. Accompany with fluffy couscous or warm flatbread to soak up the delectable sauce.
