1 cup low-sodium teriyaki sauce

2 tablespoons vegetable oil

1 tablespoon freshly grated ginger

2 garlic cloves, minced

1 cup diced bell peppers (mixed colors for vibrancy)

1 cup shredded carrots

1 cup chopped green onions (scallions)

1 tablespoon sesame seeds, toasted

1 head of iceberg or butter lettuce, leaves separated

Fresh cilantro or mint leaves, for garnish (optional)

Lime wedges, for serving

Marinate the Chicken: In a bowl, combine the diced chicken thighs with half of the teriyaki sauce, ginger, and garlic. Mix well and let it marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).
