2 cups cooked jasmine or sushi rice

1 cup broccoli florets

1/2 red bell pepper, thinly sliced

1/2 cup carrot, julienned

2 green onions, sliced (for garnish)

1 tbsp sesame seeds (for garnish)

Pickled ginger (optional, for serving)

Marinate the Chicken: In a bowl, combine soy sauce, mirin, honey, sesame oil, garlic, ginger, and if desired, cornstarch. Add the chicken, ensuring it’s well-coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
