Teriyaki Chicken with Coconut Aminos

1 lb boneless, skinless chicken thighs

1/4 cup coconut aminos

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 garlic cloves, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons water (for cornstarch mixture)

1 teaspoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Cooked rice or quinoa (for serving)

Steamed vegetables (optional, for serving)

Marinate the Chicken: In a medium bowl, combine the coconut aminos, honey or maple syrup, rice vinegar, sesame oil, minced garlic, and grated ginger. Add the chicken thighs and coat them well in the marinade. Let marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for better flavor.

    Cook the Chicken: Heat a large skillet or non-stick pan over medium-high heat. Once hot, add the marinated chicken thighs (reserve leftover marinade) and cook for about 5-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, pour the reserved marinade. If you prefer a thicker sauce, mix the cornstarch with water in a small bowl until smooth, then add it to the skillet. Bring the sauce to a simmer over medium heat, stirring continuously. Let it reduce for about 3-4 minutes, or until it thickens to your liking.

        Combine Chicken and Sauce: Return the cooked chicken to the skillet, coating it thoroughly in the teriyaki sauce for about 1-2 minutes. Ensure the chicken is heated through and well-glazed with the sauce.

          Serve: Slice the teriyaki chicken and serve it over a bed of cooked rice or quinoa. Drizzle extra sauce over the top and sprinkle with sesame seeds and sliced green onions. Add steamed vegetables on the side for a complete meal.
