Ingredients

12 oz bittersweet chocolate (or semi-sweet, depending on preference)

1 cup unsweetened shredded coconut

1/2 cup chopped almonds (or your preferred nut)

1/4 teaspoon sea salt

1 teaspoon vanilla extract

1 tablespoon coconut oil (optional for smoothness)

Optional toppings: sea salt flakes, cacao nibs, or dried fruit

Instructions

Prepare Your Workspace: Line a baking sheet with parchment paper to prevent sticking and to make it easy to lift the bark once set.

Toast the Coconut: In a dry skillet over medium heat, add the shredded coconut. Toast it for about 3-5 minutes, stirring frequently, until it turns golden and fragrant. Remove from heat and let it cool slightly.

Melt the Chocolate: In a microwave-safe bowl, combine the bittersweet chocolate and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth. If you prefer a double boiler, you can melt the chocolate over simmering water.

Combine Ingredients: Once the chocolate is melted, stir in the vanilla extract and sea salt. Add the toasted coconut and chopped almonds (and any optional toppings) to the melted chocolate and mix until everything is well coated.

Spread the Mixture: Pour the chocolate mixture onto the prepared parchment-lined baking sheet. Use a spatula to spread it evenly to your desired thickness.

Add More Toppings: If desired, sprinkle additional shredded coconut, sea salt flakes, cacao nibs, or dried fruit on top of the chocolate bark while it’s still soft.

Chill to Set: Place the baking sheet in the refrigerator for about 1-2 hours, or until the chocolate is completely set.

Break Into Pieces: Once set, remove the bark from the refrigerator. Lift it off the parchment paper and break it into pieces. Store in an airtight container at room temperature or in the fridge.
