2 cups rolled oats

1 ½ cups almond milk (or any milk of choice)

2 medium apples, peeled and diced (preferably Granny Smith for tartness)

1/4 cup pure maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin pan with cooking spray or line it with muffin liners.

    Prepare Oat Mixture: In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, cinnamon, nutmeg, baking powder, and salt. Stir well to combine and allow it to sit for about 10 minutes, letting the oats absorb some of the liquid.

      Add Apples: After resting, fold the diced apples into the oat mixture. If using, add the chopped walnuts or pecans and raisins or dried cranberries at this point for added texture and flavor.

        Fill Muffin Pan: Divide the oat mixture evenly among the 12 muffin cups, filling each cavity about three-quarters full. The mixture should look chunky with bits of apple peeking through.

          Bake: Place the muffin pan in the preheated oven and bake for 25-30 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

            Cool and Serve: Remove the pan from the oven and allow the oat cups to cool in the pan for about 10 minutes. Then, gently transfer them to a wire rack to cool completely. Enjoy warm or at room temperature, and feel free to drizzle with extra maple syrup if desired.
