12 oz cheese tortellini

2 cups heirloom tomatoes, diced (a mix of colors for visual appeal)

1 cup fresh basil leaves, torn

1/2 cup red onion, thinly sliced

1/2 cup fresh mozzarella, cubed

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 clove garlic, minced

Salt and pepper, to taste

Optional: grated Parmesan cheese for serving

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the tortellini is cooking, dice the heirloom tomatoes into bite-sized pieces. Thinly slice the red onion and cube the fresh mozzarella. Tear the basil leaves into smaller pieces, discarding the stems.

      Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, salt, and pepper until well emulsified.
