  • 1.0 lb turkey tenderloins
  • 1.0 unit ripe mango, peeled and diced
  • 1.0 unit red bell pepper, diced
  • 1.0 unit yellow bell pepper, diced
  • 1.0 cup panko breadcrumbs
  • 2.0 tbsp olive oil
  • 1.0 tsp garlic powder
  • 1.0 tsp onion powder
  • 1.0 tsp smoked paprika
  • 0.5 tsp cayenne pepper (optional)
  • None to taste salt
  • None to taste pepper
  • None for garnish fresh cilantro, chopped

Instructions
 

  • Marinate the Turkey: In a large bowl, combine the diced mango, diced red and yellow bell peppers, olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Mix well to form a marinade. Add the turkey tenderloins to the bowl, ensuring they are well-coated in the marinade. Let them marinate for at least 30 minutes in the refrigerator to absorb the flavors.
  • Preheat the Air Fryer: While the turkey is marinating, preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • Prepare the Coating: In a shallow dish, spread the panko breadcrumbs evenly. If you prefer a crunchy texture, you can season the panko with a sprinkle of salt and pepper.
