1 cup elbow macaroni

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup whole milk

1 cup sharp cheddar cheese, shredded

1/2 cup Gruyère cheese, shredded

1 tablespoon truffle oil (more to taste)

Salt and pepper to taste

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 cup breadcrumbs (for topping)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes to create a roux, being careful not to let it brown.

      Add Milk: Gradually whisk in the whole milk, stirring constantly until the mixture is smooth and begins to thicken, about 3-5 minutes.

        Incorporate Cheese: Remove the saucepan from heat and add the shredded cheddar and Gruyère cheese. Stir until fully melted and combined.

          Flavor It: Add the truffle oil, garlic powder, onion powder, salt, and pepper. Taste and adjust the seasoning or truffle oil as necessary.
