2 cups heavy cream

1 cup grated Pecorino Romano cheese

1 cup shredded mozzarella cheese

1 cup sun-dried tomatoes, chopped

1 cup fresh spinach, roughly chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and freshly ground black pepper to taste

2 tablespoons olive oil

1/2 cup breadcrumbs (optional, for topping)

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the macaroni and cook according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Prepare the Sauce: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and cook for about 30 seconds, or until fragrant.

      Add Cream: Stir in the heavy cream, letting it come to a gentle simmer, then reduce heat to low.

        Cheese Time: Gradually whisk in the Pecorino Romano cheese until melted and creamy. Then add the mozzarella cheese, stirring until fully incorporated and smooth.

          Combine Ingredients: Add the sun-dried tomatoes, chopped spinach, dried oregano, and red pepper flakes to the sauce. Stir well to combine and cook for an additional 2 minutes until the spinach has wilted.

            Mix in Pasta: Add the cooked elbow macaroni to the sauce, mixing well to coat the pasta. If the mixture is too thick, add reserved pasta water, a tablespoon at a time, until desired consistency is reached. Season with salt and pepper to taste.

              Optional Topping: If you prefer a crispy topping, transfer the Mac and Cheese to a baking dish, sprinkle breadcrumbs evenly over the top, and place it under the broiler for 2-3 minutes until golden and crispy. Keep a close eye to avoid burning.
