Ingredients

1 cup all-purpose flour

2 large eggs

1 tablespoon sugar

2 cups milk (preferably whole or 2%)

1 teaspoon pure vanilla extract

2 tablespoons unsalted butter, melted (plus more for cooking)

A pinch of salt

Optional toppings: Fresh berries, whipped cream, chocolate sauce, or maple syrup

Instructions

Prepare the Batter: In a mixing bowl, whisk together the flour and sugar. In another bowl, beat the eggs lightly. Add the milk, vanilla extract, and melted butter to the eggs, and whisk until well combined.

Combine Wet and Dry Ingredients: Gradually pour the wet mixture into the dry ingredients while whisking continuously to prevent lumps. Blend until the batter is smooth and homogeneous. Let it rest for at least 30 minutes at room temperature.

Heat the Pan: Heat a non-stick skillet or crepe pan over medium heat. Add a small amount of butter to coat the bottom.

Cook the Crepes: Pour about 1/4 cup of batter into the pan, tilting it to spread the batter evenly into a thin layer. Cook for 1-2 minutes until the edges start to lift and the bottom is light golden brown.

Flip the Crepe: Using a spatula, carefully flip the crepe and cook for another 1 minute until lightly golden. Transfer the cooked crepe to a plate and cover it to keep warm. Repeat the process with the remaining batter, adding more butter to the pan as needed.

Serve: Stack your crepes and serve them warm. Top with desired toppings such as fresh berries, whipped cream, or a drizzle of chocolate sauce or maple syrup.

Enjoy: Fold or roll the crepes, plate, and savor the delightful flavors!
