Velvety Tomato Basil Bisque

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

2 (14 oz) cans of crushed tomatoes (preferably San Marzano)

2 cups vegetable or chicken broth

1 teaspoon sugar (optional, to balance acidity)

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup heavy cream (or coconut cream for a dairy-free option)

1/2 cup fresh basil leaves, torn or chopped

Optional garnish: extra basil leaves, a drizzle of olive oil, or croutons

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent. Add the minced garlic, diced carrot, and diced celery, cooking for another 5-7 minutes until softened.

    Add Tomatoes & Spices: Stir in the crushed tomatoes, vegetable or chicken broth, sugar (if using), dried oregano, red pepper flakes, salt, and pepper. Bring the mixture to a gentle simmer. Cook uncovered for about 20 minutes to allow the flavors to meld.

      Blend the Soup: Remove the pot from heat. Using an immersion blender, puree the soup until smooth and velvety. If you don’t have an immersion blender, you can carefully blend the soup in batches using a regular blender.

        Stir in Cream & Basil: Return the soup to low heat and stir in the heavy cream (or coconut cream) and the fresh basil. Allow it to heat through for another 5 minutes, stirring occasionally. Adjust seasoning with more salt and pepper if needed.
