Ingredients

1 medium butternut squash, peeled and diced

2 medium apples (preferably Granny Smith or Honeycrisp), cored and diced

1 tablespoon olive oil

2 tablespoons unsalted butter

1/4 cup brown sugar (or maple syrup for a healthier option)

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 teaspoon vanilla extract

1/4 cup pecans or walnuts, chopped

Salt and pepper to taste

Fresh rosemary or thyme for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and prepare a baking dish by greasing it lightly with cooking spray or butter.

Prepare the Butternut Squash: In a large bowl, toss the diced butternut squash with olive oil, salt, and pepper until evenly coated.

Combine Apples and Spices: In another bowl, mix the diced apples with the brown sugar (or maple syrup), ground cinnamon, nutmeg, ground ginger, and vanilla extract until the apples are well coated.

Layer Ingredients: In the greased baking dish, create an even layer of the butternut squash on the bottom. Pour the spiced apple mixture on top of the squash, spreading it evenly.

Add Butter and Nuts: Dot the surface with small pieces of the unsalted butter evenly distributed. Sprinkle the chopped pecans or walnuts over the dish for added crunch.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 25 minutes. Then remove the foil and bake for an additional 20-25 minutes, or until the squash is tender and slightly caramelized at the edges.

Garnish and Serve: Once baked, take it out of the oven and let it cool for a few minutes. Garnish with fresh rosemary or thyme before serving to add a fragrant touch.

Enjoy: Serve warm as a comforting side dish or a cozy dessert topped with a scoop of vanilla ice cream or whipped cream for an extra treat!
