Warm Apple Cinnamon Yogurt Muffins

1 cup all-purpose flour

1 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tablespoon ground cinnamon

1/2 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 cup plain yogurt (Greek or regular)

1/3 cup vegetable oil or melted coconut oil

1 tsp vanilla extract

1 1/2 cups peeled and diced apples (about 2 medium apples)

Optional: 1/2 cup chopped walnuts or pecans

Preheat the oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease each cup with non-stick spray.

    Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon until well combined.

      Combine sugars: In a separate bowl, mix the granulated sugar and brown sugar until evenly blended. This will ensure that every muffin has the perfect sweetness.

        Whisk wet ingredients: In another bowl, beat the eggs. Add the yogurt, vegetable oil, and vanilla extract. Whisk until smooth and well combined.

          Mix it all together: Pour the wet ingredients into the bowl with the sugars. Mix gently until just combined. Gradually fold in the dry ingredients until no flour pockets remain—be careful not to overmix.

            Fold in apples and nuts: Gently fold in the diced apples, and if using, the chopped walnuts or pecans. This will add crunch and flavor to your muffins.

              Fill muffin tin: Divide the batter evenly among the muffin cups, filling each one about 3/4 full.
