2 racks baby back ribs (about 3 lbs each)

1 cup whisky (choose a smooth, mellow blend)

1/2 cup apple cider vinegar

1/4 cup brown sugar

1/4 cup honey

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon smoked paprika

1 teaspoon black pepper

1 teaspoon salt

1/2 teaspoon cayenne pepper (optional)

Fresh parsley for garnish

Instructions
 

Prepare the Ribs:

    - Remove the membrane from the back of each rack of ribs using a paper towel for grip. This helps in tenderness.

      Make the Marinade:

        - In a mixing bowl, combine whisky, apple cider vinegar, brown sugar, honey, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, smoked paprika, black pepper, salt, and cayenne pepper. Whisk until well blended.

          Marinate:

            - Place the ribs in a large resealable bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 4 hours, preferably overnight for maximum flavor.

              Preheat the Grill:

                - Preheat your grill to medium heat (about 300°F/150°C). You can use an indirect heat method by turning on one side of the grill and leaving the other side off.

                  Cook the Ribs:

                    - Remove the ribs from the marinade, reserving the marinade for later. Place the ribs bone-side down on the grill over the cooler side (indirect heat). Cover the grill and cook for approximately 2 to 2.5 hours. Flip the ribs every 30 minutes and baste them with the reserved marinade for extra flavor.

                      Baste and Finish on Direct Heat:

                        - Once the ribs are tender and cooked through, move them to the side of the grill with direct heat. Brush them with additional marinade and grill for about 5-10 minutes per side until the outside caramelizes and gets a nice char.
