1 cup rolled oats

1 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup canned pumpkin puree (not pumpkin pie filling)

1/2 cup maple syrup or honey

1/2 cup unsweetened applesauce

1/4 cup milk (dairy or plant-based)

1 large egg

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips or raisins (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease with cooking spray.

    In a medium bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk until well mixed and set aside.

      In a large mixing bowl, whisk together the pumpkin puree, maple syrup (or honey), applesauce, milk, egg, and vanilla extract until smooth and well combined.

        Gradually stir the dry ingredient mixture into the wet ingredients, mixing until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

          If using, fold in the chopped nuts and chocolate chips or raisins for added texture and sweetness.

            Evenly distribute the batter into the prepared muffin tin, filling each cavity about 2/3 full.

              Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
