Ingredients

2 cups Greek yogurt (plain or flavored)

1 cup granola (your choice of flavor)

2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)

2 tablespoons honey or maple syrup (for drizzling)

1 teaspoon vanilla extract (optional)

Fresh mint leaves (for garnish)

Instructions

Prepare the Yogurt: If you're using plain Greek yogurt, stir in the vanilla extract for added flavor. For a touch of sweetness, you can also fold in a tablespoon of honey or maple syrup into the yogurt.

Wash the Berries: Rinse the mixed berries gently under cold water. Slice the strawberries if they are whole and leave the other berries whole.

Layer the Parfaits: In a clear glass or parfait cup, start with a layer of yogurt at the bottom. Use about ½ cup of yogurt for the first layer.

Add Granola: Sprinkle a layer of granola (about ¼ cup) over the yogurt to add crunch and texture.

Layer Berries: Add a layer of mixed berries (around ½ cup) over the granola. Feel free to mix and match or choose your favorites.

Repeat Layers: Repeat the layering process until you reach the top of the glass, finishing with a layer of yogurt followed by a sprinkle of granola and a final topping of berries.

Drizzle and Garnish: Drizzle honey or maple syrup over the top, and add a sprig of fresh mint for garnish.

Serve Immediately: These parfaits are best served immediately but can be prepared in advance and stored in the fridge (unlayered) for a few hours.
