Zesty BBQ Chicken Flatbread Sandwiches

2 cups cooked chicken, shredded (preferably rotisserie)

1/2 cup barbecue sauce (your favorite kind)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup fresh cilantro, chopped

4 pieces of flatbread (whole wheat or your choice)

1 avocado, sliced

1/2 cup corn kernels (canned or frozen)

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Olive oil, for brushing

Optional: Hot sauce for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: In a medium bowl, combine the shredded chicken with barbecue sauce. Mix until the chicken is evenly coated. If you prefer a smokier flavor, stir in the smoked paprika along with salt and pepper to taste.

      Prepare Flatbreads: Lay the flatbreads on a baking sheet lined with parchment paper. Brush each flatbread lightly with olive oil for added crispiness.

        Assemble the Flatbreads:

          - Evenly spread the BBQ chicken mixture over each flatbread, leaving a small border around the edges.

            - Top with shredded mozzarella cheese, followed by slices of red onion, corn kernels, and avocado slices.

              - Sprinkle chopped cilantro over the top.

                Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the cheese is melted and bubbly, and the edges of the flatbreads are golden.

                  Serve: Remove the flatbreads from the oven and let them cool for a couple of minutes. Cut into wedges and drizzle with hot sauce if desired. Serve warm and enjoy!
