8 oz (225g) pasta of choice (spaghetti or penne works well)

1 can (15 oz or 425g) chickpeas, drained and rinsed

3 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 large lemon

Juice of 1 large lemon (about 3 tablespoons)

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

2 cups fresh spinach

Salt and pepper to taste

Fresh basil or parsley, for garnish

Grated Parmesan cheese (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until the garlic is fragrant, about 1 minute.

      Add Chickpeas and Tomatoes: Stir in the chickpeas and halved cherry tomatoes. Cook for 3-4 minutes until the tomatoes begin to soften.

        Combine Ingredients: Add the reserved pasta to the skillet, along with the lemon zest, lemon juice, and spinach. Toss everything together, adding reserved pasta water gradually until the desired creaminess is achieved.

          Season: Season with salt and pepper to taste. Cook for another 2-3 minutes, allowing the spinach to wilt and the flavors to meld.
