1 cup quinoa, rinsed

2 cups vegetable broth (or water)

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil, divided

4 cloves garlic, minced

Juice and zest of 1 large lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 avocado, sliced

1 cup fresh spinach or arugula

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil over high heat. Once boiling, reduce to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes. Fluff with a fork.

    Prepare the Shrimp Marinade: In a mixing bowl, combine 2 tablespoons of olive oil, minced garlic, lemon juice, lemon zest, red pepper flakes, salt, and pepper. Whisk until well combined.
