4 bone-in, skin-on chicken thighs

3 tablespoons olive oil

2 large lemons (zest and juice of both)

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon Dijon mustard

1 teaspoon honey (optional)

Salt and pepper, to taste

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Marinade: In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, thyme, parsley, Dijon mustard, honey (if using), and a generous pinch of salt and pepper until well combined.
