1 lb (450g) boneless, skinless chicken breasts

1/4 cup fresh lime juice (about 2-3 limes)

2 tbsp olive oil

3 cloves garlic, minced

1 tsp chili powder

1/2 tsp cumin

1/4 tsp cayenne pepper (optional, for heat)

Salt and pepper to taste

1 cup cooked quinoa (or rice)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup fresh cilantro, chopped

Lime wedges for serving

Marinate the Chicken:

    In a bowl, mix together lime juice, olive oil, minced garlic, chili powder, cumin, cayenne pepper (if using), salt, and pepper. Add the chicken breasts to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).

      Cook the Chicken:

        Heat a grill pan or outdoor grill over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let it rest for a few minutes before slicing.
