3 medium zucchinis, grated

1 cup sharp cheddar cheese, shredded

1/2 cup diced onion

1/2 cup diced bell pepper (any color)

4 large eggs

1/4 cup milk (or a milk alternative)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (for sautéing)

Instructions
 

Preheat the oven to 375°F (190°C). Grease a 9x9-inch or similar-sized baking dish with cooking spray or olive oil.

    Prepare the vegetables: In a skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, and sauté for about 5 minutes, until softened.

      Squeeze out the moisture: Place the grated zucchini in a clean kitchen towel, twisting and squeezing to remove excess water. This helps prevent the bake from becoming soggy.

        Mix ingredients: In a large mixing bowl, combine the grated zucchini, sautéed onions and bell peppers, and shredded cheddar cheese. Stir in the eggs, milk, garlic powder, onion powder, paprika, and season with salt and pepper. Mix until well combined.

          Transfer to baking dish: Pour the mixture into the prepared baking dish, spreading it evenly. If you like a crunchy topping, sprinkle breadcrumbs over the top.

            Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
