2 large zucchinis, grated

1/2 teaspoon salt

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 large eggs

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1/2 cup cherry tomatoes, halved

1/2 cup bell pepper, diced

1/4 cup cooked bacon or sausage, crumbled (optional)

Fresh basil leaves, for garnish

Olive oil, for drizzling

Instructions
 

Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean towel or cheesecloth and squeeze out excess moisture. This step is crucial to prevent a soggy crust.

    Make the Zucchini Base: In a large bowl, combine the dried zucchini, salt, mozzarella cheese, Parmesan cheese, eggs, Italian herbs, garlic powder, and black pepper. Mix until all ingredients are well combined and form a dough-like consistency.

      Shape the Crust: Preheat your oven to 400°F (200°C). Line a pizza stone or baking tray with parchment paper. Transfer the zucchini mixture onto the paper and flatten it into a circular shape, about 1/4 inch thick. Make sure the edges are slightly raised for a crust-like appearance.
