Zucchini Jalapeño Poppers

4 medium-sized zucchinis

4 fresh jalapeños

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/4 teaspoon cayenne pepper (adjust for heat preference)

Salt and black pepper to taste

1/4 cup breadcrumbs (optional, for extra crunch)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Slice the zucchinis in half lengthwise. Using a small spoon or melon baller, scoop out the center of each half to create a boat shape, leaving about 1/4 inch of the flesh intact. Set aside the scooped-out flesh for later use.

      Prepare the Jalapeños: Carefully slice the jalapeños in half lengthwise, removing seeds and membranes (for less heat, keep some seeds).

        Make the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, grated Parmesan cheese, minced garlic, smoked paprika, cumin, cayenne pepper, salt, and black pepper. Finely chop the reserved zucchini flesh and fold it into the cheese mixture until well combined.

          Stuff the Peppers: Generously spoon the cheese mixture into each zucchini half and jalapeño half. If desired, sprinkle breadcrumbs on top for added crunch.

            Bake: Arrange the stuffed zucchini and jalapeño poppers on the prepared baking sheet. Bake in the preheated oven for about 25-30 minutes, or until the tops are golden and the cheese is bubbling.
