Zucchini Lasagna Rolls

3 large zucchinis, sliced lengthwise into thin strips

2 cups ricotta cheese

1 cup grated mozzarella cheese, plus more for topping

1/2 cup grated Parmesan cheese

1 large egg

2 cups fresh spinach, chopped

2 cloves garlic, minced

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

Salt and pepper to taste

3 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Lay the zucchini strips on a clean kitchen towel and sprinkle a little salt over them. Let them sit for about 15 minutes to draw out moisture. Pat them dry with another towel.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, chopped spinach, minced garlic, oregano, basil, and salt and pepper. Mix until well combined.

      Assemble the Rolls: Spread a thin layer of marinara sauce on the bottom of a baking dish. Take one zucchini strip and place a spoonful of the ricotta mixture in the center. Roll it up gently and place seam-side down in the baking dish. Repeat for the remaining strips and filling.

        Add Sauce and Cheese: Once all the rolls are arranged in the dish, pour the remaining marinara sauce over the top. Sprinkle the remaining mozzarella cheese evenly over the sauce.

          Bake the Rolls: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.

            Serve: Let the lasagna rolls cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
