2 medium zucchinis, finely grated

1 cup sharp cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 small jalapeño, finely chopped (seeds removed for less heat)

1/2 teaspoon cumin

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cream cheese, softened

1/2 cup sour cream

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

Prep the Zucchini: Start by grating the zucchinis. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This will prevent your dip from being too watery.

    Sauté Aromatics: In a medium skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and chopped jalapeño, cooking for an additional 2 minutes until fragrant.

      Cook the Zucchini: Add the squeezed zucchini to the skillet with the onion, garlic, and jalapeño. Sprinkle in the cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper. Stir and cook for another 5 minutes until the zucchini is tender.
