Zucchini Ranch Snack Bites

2 medium zucchinis, grated

1 cup shredded cheese (cheddar or mozzarella)

1/2 cup breadcrumbs (preferably whole wheat)

1 large egg, beaten

1/4 cup ranch dressing

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt

Fresh parsley, chopped (for garnish)

Cooking spray or olive oil (for greasing)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.

    In a large mixing bowl, combine the grated zucchinis, shredded cheese, breadcrumbs, beaten egg, ranch dressing, garlic powder, onion powder, black pepper, and salt. Mix well until all ingredients are thoroughly combined.

      Using your hands, form small bite-sized balls (about 1-2 tablespoons each) from the mixture and place them on the prepared baking sheet, spaced evenly apart.

        Lightly spray the tops of the zucchini bites with cooking spray or drizzle a little olive oil on them to help with browning.

          Bake in the preheated oven for about 20-25 minutes or until they are golden brown and firm to the touch.

            Remove from the oven and let cool for a few minutes. Transfer to a serving plate and garnish with freshly chopped parsley before serving.
