3 medium zucchinis, grated

1 cup all-purpose flour

3 large eggs

1/2 cup grated Parmesan cheese

1/2 cup milk

1/4 cup olive oil

1 tablespoon fresh basil, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Prep the Zucchini: Begin by washing the zucchinis and grating them using a box grater or food processor. Place the grated zucchini in a colander, sprinkle with a little salt, and let it sit for about 15 minutes to draw out excess moisture. After 15 minutes, pat the zucchini dry with paper towels.

    Prepare the Batter: In a large mixing bowl, whisk together the eggs and milk until well combined. Gradually add in the flour while whisking to avoid lumps. Stir in the grated Parmesan cheese, olive oil, garlic powder, onion powder, chopped basil, and parsley. Mix until smooth.

      Combine Ingredients: Gently fold in the prepared zucchini into the batter. Season with salt and pepper to taste. Make sure the zucchini is evenly distributed throughout the mixture.
