Zucchini & Spinach Stuffed Shells

20 large pasta shells

2 cups fresh spinach, chopped

1 medium zucchini, grated

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon Italian seasoning

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta shells and cook them according to package instructions until al dente. Drain and set aside.

      Prepare the Filling: In a large skillet over medium heat, add a splash of olive oil and sauté the minced garlic until fragrant, about 1 minute. Add the chopped spinach and grated zucchini. Cook for 3-4 minutes until the spinach is wilted and zucchini is tender. Remove from heat.

        Mix the Filling: In a large bowl, combine the sautéed vegetables with ricotta cheese, half of the mozzarella cheese, Parmesan cheese, beaten egg, salt, pepper, and Italian seasoning. Mix until well combined.

          Stuff the Shells: Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Using a teaspoon, stuff each pasta shell with the zucchini and spinach filling. Place the stuffed shells in the baking dish, open side up.

            Top with Sauce: Once all the shells are stuffed, pour the remaining marinara sauce over the top. Sprinkle the rest of the mozzarella cheese evenly over the sauce.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and slightly golden.
