Zucchini Sweet Corn Fritters

2 medium zucchinis, grated

1 cup sweet corn kernels (fresh, frozen, or canned)

1/2 cup all-purpose flour (or gluten-free flour)

2 large eggs

1/4 cup grated Parmesan cheese (optional for extra flavor)

1/4 cup green onions, finely chopped

1 clove garlic, minced

1 teaspoon baking powder

1/2 teaspoon cumin powder

Salt and pepper, to taste

Olive oil or vegetable oil, for frying

Fresh cilantro or parsley, for garnish (optional)

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Prepare the Zucchini: Start by grating the zucchinis using a box grater or food processor. Once grated, place them in a clean kitchen towel or cheesecloth, and squeeze out as much excess moisture as possible. This will help the fritters crisp up nicely.

    Mix Ingredients: In a large bowl, combine the grated zucchini, sweet corn kernels, flour, eggs, Parmesan cheese (if using), green onions, garlic, baking powder, cumin, salt, and pepper. Stir until all ingredients are well combined and a batter forms.

      Heat the Oil: In a large skillet, add enough oil to cover the bottom of the pan (about 1/4 inch deep) and heat over medium heat. To test if the oil is ready, drop a small spoonful of the batter into the pan; it should sizzle immediately.

        Fry the Fritters: Scoop about 2 tablespoons of the batter into the hot oil for each fritter, gently flattening them with the back of the spoon. Fry the fritters in batches, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side or until they are golden brown and crispy.
