3 medium zucchinis, diced

1 cup black beans, rinsed and drained

1 red bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

8 corn tortillas

1 cup fresh corn (can be canned or frozen)

Fresh cilantro, for garnish

Lime wedges, for serving

Optional: avocado slices or guacamole for topping

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced zucchini, red bell pepper, and red onion. Sauté for about 5-7 minutes, until the vegetables are tender.
