Zucchini & Tomato Summer Skillet

Ingredients
  

2 medium zucchini, sliced into half-moons

2 cups cherry tomatoes, halved

1 medium red onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1/4 cup fresh basil leaves, torn

1/2 cup crumbled feta cheese (optional)

Juice of 1 lemon

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced red onion and sauté for about 3-4 minutes, until it becomes translucent.

    Add Garlic: Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

      Cook Zucchini: Add the sliced zucchini to the skillet. Season with salt, pepper, dried basil, and oregano. Cook for approximately 5-7 minutes, stirring occasionally, until the zucchini is tender and slightly caramelized.

        Incorporate Tomatoes: Add the halved cherry tomatoes to the skillet. Cook for another 5 minutes, allowing the tomatoes to soften and release their juices.

          Finish with Fresh Herbs: Remove the skillet from heat, stir in the fresh basil leaves and squeeze the juice of one lemon over the mixture.

            Optional Topping: If you’re using feta cheese, sprinkle it over the top, allowing it to soften slightly from the residual heat.

              Serve: Serve warm as a side dish, or enjoy it as a light main course alongside crusty bread.
