2 medium zucchinis, sliced thinly lengthwise

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup baby spinach, chopped

1/2 cup bell peppers, diced (any color)

1/2 cup red onion, finely chopped

1 garlic clove, minced

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional)

1 cup marinara sauce (store-bought or homemade)

Olive oil for brushing

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare the Zucchini: Preheat your oven to 400°F (200°C). Slice the zucchinis lengthwise into thin strips (about 1/8 inch thick). Place them on a baking sheet lined with parchment paper, lightly sprinkle with salt, and let them sit for about 10 minutes to draw out excess moisture. Pat dry with paper towels.

    Make the Filling: In a medium mixing bowl, combine the ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, chopped spinach, diced bell peppers, red onion, minced garlic, Italian seasoning, and crushed red pepper flakes (if using). Season with salt and pepper to taste. Mix well until all ingredients are evenly incorporated.

      Assemble the Rolls: Take one zucchini strip, place about a tablespoon of filling at one end, and roll it up gently. Secure the roll with a toothpick if needed. Repeat this process with the remaining zucchini slices and filling.
